Huai salt is a kind of salt and came to the name due to Huai River flows through Jiangsu salt field. Huai salt production was originated in the Spring & Autumn Period, developed in the Han Dynasty and Tang Dynasty, prospered in the Song Dynasty and Yuan Dynasty, and reached the period of great prosperity in the Ming Dynasty and Qing Dynasty; it has a history of over 4,000 years, and has been recorded in characters for over 2,500 years.
The salt making skill is quite special and different from the general intangible culture, its product is closely linked with people’s daily life and industrial production. With seawater as the basic raw material, people make use of the coastal tideland and its salt mud (or mixed with artificial dirt), evaporate by both sunshine and wind to make bittern by means of manual sprinkling and splashing, and then crystallize into raw salt by fire frying or sunshine, wind etc.
There are over 10 working procedures for the whole process which are purely manual, but contain very rich scientific technology gene, so it is the intangible culture of historical culture value.
